Organoleptic Characteristics
Eucalyptus honey has an amber color and a rather compact and dense consistency. Once crystallized, its color turns beige-grayish. The flavor is often described as persistent, strong, intense, particularly balsamic and not excessively sweet. Its smell recalls the smell of dried mushrooms or bouillon cubes, while its taste is comparable to liquorice and malt sweets.
